Description
A traditional Italian seafood soup perfect for Christmas Eve, packed with fresh fish and shellfish in a rich tomato broth.
Ingredients

- 500g mixed seafood (shrimp, mussels, clams, squid)
- 300g white fish fillets (cod or halibut)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 400g canned tomatoes
- 500ml fish stock
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
- 4 slices of crusty bread
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in tomatoes and fish stock, bring to a simmer.
- Add oregano, salt, and pepper.
- Add white fish fillets and cook for 5 minutes.
- Add mixed seafood and cook until shells open and shrimp turn pink.
- Toast bread slices.
- Serve soup hot with toasted bread on the side.
Notes
- Use fresh seafood for best flavor.
- Adjust seasoning to taste.
- Discard any unopened shellfish.
