Description

Zucchine ripiene is a delicious Italian dish made with hollowed-out zucchini filled with a savory mixture of ingredients, then baked to perfection.


Ingredients

  • 4 medium zucchinis
  • 200g ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup tomato sauce

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cut zucchinis in half lengthwise and scoop out the flesh, leaving a 1cm shell.
  3. Chop the scooped zucchini flesh and set aside.
  4. In a pan, heat olive oil and sauté garlic until fragrant.
  5. Add ground beef and cook until browned.
  6. Add chopped zucchini flesh and cook for 5 minutes.
  7. Remove from heat and mix in breadcrumbs, Parmesan, egg, salt, and pepper.
  8. Fill zucchini shells with the mixture.
  9. Place in a baking dish and pour tomato sauce around them.
  10. Bake for 25-30 minutes until golden brown.

Notes

  • You can substitute ground beef with ground turkey or a vegetarian alternative.
  • For extra flavor, add fresh herbs like basil or parsley.
  • Leftovers can be stored in the fridge for up to 3 days.
