Ingredients

- 1 zampone (stuffed pork trotter)
- 4 large potatoes
- 50g butter
- 100ml milk
- Salt to taste
- Black pepper to taste
Instructions
- Place the zampone in a large pot and cover with water.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Peel and chop the potatoes, then boil until tender.
- Drain the potatoes and mash with butter and milk.
- Season the mashed potatoes with salt and pepper.
- Slice the zampone and serve with mashed potatoes.
Notes
- Zampone can be pre-boiled to reduce cooking time.
- For extra flavor, add a bay leaf to the cooking water.
