Description

Zampone con Purè di Patate is a traditional Italian dish featuring stuffed pork trotter served with creamy mashed potatoes.


Ingredients

  • 1 zampone (stuffed pork trotter)
  • 4 large potatoes
  • 50g butter
  • 100ml milk
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Place the zampone in a large pot and cover with water.
  2. Bring to a boil, then reduce heat and simmer for 2 hours.
  3. Peel and chop the potatoes, then boil until tender.
  4. Drain the potatoes and mash with butter and milk.
  5. Season the mashed potatoes with salt and pepper.
  6. Slice the zampone and serve with mashed potatoes.

Notes

  • Zampone can be pre-boiled to reduce cooking time.
  • For extra flavor, add a bay leaf to the cooking water.
