  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 400g canned tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1/2 cup white wine (optional)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Add tripe and cook for 5 minutes, stirring occasionally.
  4. Pour in white wine (if using) and let it simmer for 2 minutes.
  5. Add canned tomatoes, tomato paste, oregano, and basil. Stir well.
  6. Season with salt and pepper, cover, and simmer on low heat for 2-3 hours, stirring occasionally.
  7. Serve hot, sprinkled with Parmesan cheese if desired.
