Ingredients

- 500g fresh tortellini
- 1 capon (about 2kg)
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 bay leaves
- Salt to taste
- Pepper to taste
- Parmesan cheese for serving
Instructions
- Place the capon in a large pot and cover with water.
- Add chopped carrots, celery, onion, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Strain the broth and discard solids.
- Return the broth to the pot and bring to a simmer.
- Add tortellini and cook according to package instructions.
- Season with salt and pepper.
- Serve hot with grated Parmesan cheese.

- Skim any foam from the broth while simmering.
