Description

Ingredients

  • 500g fresh tortellini
  • 1 capon (about 2kg)
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Place the capon in a large pot and cover with water.
  2. Add chopped carrots, celery, onion, and bay leaves.
  3. Bring to a boil, then reduce heat and simmer for 2 hours.
  4. Strain the broth and discard solids.
  5. Return the broth to the pot and bring to a simmer.
  6. Add tortellini and cook according to package instructions.
  7. Season with salt and pepper.
  8. Serve hot with grated Parmesan cheese.
