- 1 pork shank (about 1.5 kg)
- 500 ml dark beer
- 4 large potatoes, peeled and quartered
- 2 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- Preheat oven to 180°C (350°F).
- Heat olive oil in a large ovenproof pot over medium heat.
- Sear the pork shank on all sides until browned.
- Add onions, garlic, and carrots. Cook for 3 minutes.
- Pour in the beer and add bay leaves, salt, and pepper.
- Bring to a simmer, then cover and transfer to the oven.
- Cook for 1.5 hours.
- Add potatoes and cook for another 45 minutes until tender.
- Remove from oven and let rest for 10 minutes before serving.
Notes
- Use a dark, malty beer for deeper flavor.
- Check the pork for doneness; it should pull apart easily.
- Serve with crusty bread to soak up the sauce.
