Description

Ingredients

  • 1 pork shank (about 1.5 kg)
  • 500 ml dark beer
  • 4 large potatoes, peeled and quartered
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Heat olive oil in a large ovenproof pot over medium heat.
  3. Sear the pork shank on all sides until browned.
  4. Add onions, garlic, and carrots. Cook for 3 minutes.
  5. Pour in the beer and add bay leaves, salt, and pepper.
  6. Bring to a simmer, then cover and transfer to the oven.
  7. Cook for 1.5 hours.
  8. Add potatoes and cook for another 45 minutes until tender.
  9. Remove from oven and let rest for 10 minutes before serving.

Notes

  • Use a dark, malty beer for deeper flavor.
  • Check the pork for doneness; it should pull apart easily.
  • Serve with crusty bread to soak up the sauce.
