Ingredients

- 250g fresh spinach
- 250g ricotta cheese
- 200g pasta sheets
- 50g grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Blanch the spinach in boiling water for 2 minutes, then drain and squeeze out excess water.
- Chop the spinach finely and mix with ricotta, Parmesan, egg, salt, and pepper.
- Lay the pasta sheets flat and spread the filling evenly.
- Roll tightly into a log and brush with olive oil.
- Bake at 180°C (350°F) for 25-30 minutes until golden.
- Slice and serve warm.
Notes
- You can add nutmeg for extra flavor.
- Let it cool slightly before slicing for cleaner cuts.
