Ingredients

  • 1 1/2 cups Arborio rice
  • 1/2 cup champagne
  • 4 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat broth in a saucepan and keep warm.
  2. Melt butter in a large pan and sauté onion until soft.
  3. Add rice and stir for 2 minutes.
  4. Pour in champagne and cook until absorbed.
  5. Add broth one ladle at a time, stirring until absorbed.
  6. Repeat until rice is creamy and tender.
  7. Stir in Parmesan cheese.
  8. Season with salt and pepper.
