- 1 1/2 cups Arborio rice
- 1/2 cup champagne
- 4 cups chicken or vegetable broth
- 1 small onion, finely chopped
- 2 tbsp butter
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat broth in a saucepan and keep warm.
- Melt butter in a large pan and sauté onion until soft.
- Add rice and stir for 2 minutes.
- Pour in champagne and cook until absorbed.
- Add broth one ladle at a time, stirring until absorbed.
- Repeat until rice is creamy and tender.
- Stir in Parmesan cheese.
- Season with salt and pepper.
