- 1 cup Arborio rice
- 4 cups vegetable broth
- 1/2 cup white wine
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil and butter in a large pan over medium heat.
- Add onion and garlic, cook until soft.
- Add Arborio rice, stir for 1 minute.
- Pour in white wine, cook until absorbed.
- Add broth, one ladle at a time, stirring constantly.
- Continue until rice is creamy and cooked.
- Stir in Parmesan cheese.
- Season with salt and pepper.
