Description

A simple and flavorful Italian salad featuring tender octopus and potatoes, dressed with olive oil, lemon, and herbs.


Ingredients

  • 500g octopus, cleaned
  • 500g potatoes, peeled and cubed
  • 3 tbsp extra virgin olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Boil the octopus in salted water for 30-40 minutes until tender. Drain and let cool.
  2. Cut the octopus into bite-sized pieces.
  3. Boil the potatoes in salted water until tender, about 15 minutes. Drain and let cool.
  4. In a large bowl, combine octopus, potatoes, olive oil, lemon juice, garlic, parsley, salt, and black pepper.
  5. Toss gently to mix. Serve chilled or at room temperature.
