Instructions

  1. Clean the artichokes by removing tough outer leaves and cutting into thin slices. Soak in lemon water to prevent browning.
  2. Cook pasta in salted boiling water until al dente. Drain, reserving some pasta water.
  3. Heat olive oil in a pan. Add garlic and sauté until fragrant.
  4. Add artichokes and cook until tender, about 5-7 minutes.
  5. Toss in the pasta and mix well. Add reserved pasta water if needed.
  6. Season with salt and black pepper. Serve with grated Parmesan cheese.
