A simple and flavorful dish featuring sea bass baked in a salt crust with aromatic herbs.
Ingredients
Scale
- 1 whole sea bass (about 1.5 kg), cleaned
- 1 kg coarse sea salt
- 2 egg whites
- 2 sprigs rosemary
- 2 sprigs thyme
- 1 lemon, sliced
- 2 tbsp olive oil
Instructions
- Preheat oven to 200°C.
- Mix salt and egg whites in a bowl until crumbly.
- Stuff the fish cavity with rosemary, thyme, and lemon slices.
- Spread half the salt mixture on a baking tray.
- Place the fish on top and cover with remaining salt.
- Bake for 30 minutes.
- Remove from oven and crack the salt crust.
- Drizzle with olive oil before serving.

- Ensure the fish is scaled and gutted.
- Use fresh herbs for best flavor.
- Serve immediately after cracking the crust.
