Description

Ingredients

Scale
  • 1 whole sea bass (about 1.5 kg), cleaned
  • 1 kg coarse sea salt
  • 2 egg whites
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 lemon, sliced
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 200°C.
  2. Mix salt and egg whites in a bowl until crumbly.
  3. Stuff the fish cavity with rosemary, thyme, and lemon slices.
  4. Spread half the salt mixture on a baking tray.
  5. Place the fish on top and cover with remaining salt.
  6. Bake for 30 minutes.
  7. Remove from oven and crack the salt crust.
  8. Drizzle with olive oil before serving.
