Ingredients

- 2 filet mignon steaks (8 oz each)
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 tbsp butter
- 1 cup asparagus, trimmed
- 1 cup cherry tomatoes
- 1/2 cup red wine
- 1 tsp fresh thyme
- 1/2 cup heavy cream
- 1 tbsp Dijon mustard
Instructions
- Preheat your oven to 400°F (200°C).
- Season the steaks with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear steaks for 3 minutes per side.
- Add garlic, butter, and thyme to the skillet. Baste the steaks with the melted butter.
- Transfer the skillet to the oven and cook for 5-7 minutes for medium-rare.
- Remove steaks and let them rest. In the same skillet, add red wine and reduce by half.
- Stir in heavy cream and Dijon mustard. Simmer until the sauce thickens.
- Meanwhile, sauté asparagus and cherry tomatoes in a separate pan until tender.
- Plate the steaks with the vegetables and drizzle with the red wine sauce.
Notes
- Let the steaks rest for 5 minutes before slicing.
- Use fresh herbs for the best flavor.
