Ingredients

  • 2 filet mignon steaks (8 oz each)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 cup asparagus, trimmed
  • 1 cup cherry tomatoes
  • 1/2 cup red wine
  • 1 tsp fresh thyme
  • 1/2 cup heavy cream
  • 1 tbsp Dijon mustard

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the steaks with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear steaks for 3 minutes per side.
  4. Add garlic, butter, and thyme to the skillet. Baste the steaks with the melted butter.
  5. Transfer the skillet to the oven and cook for 5-7 minutes for medium-rare.
  6. Remove steaks and let them rest. In the same skillet, add red wine and reduce by half.
  7. Stir in heavy cream and Dijon mustard. Simmer until the sauce thickens.
  8. Meanwhile, sauté asparagus and cherry tomatoes in a separate pan until tender.
  9. Plate the steaks with the vegetables and drizzle with the red wine sauce.
