Description
A refreshing seafood salad with mixed seafood, fresh herbs, and a light dressing.
Ingredients

- 500g mixed seafood (shrimp, squid, mussels)
- 1 lemon (juiced)
- 2 tbsp extra virgin olive oil
- 1 clove garlic (minced)
- 1/4 cup fresh parsley (chopped)
- 1/2 red onion (thinly sliced)
- Salt and pepper to taste
Instructions
- Clean and cook the seafood until just done.
- Drain and let cool.
- In a bowl, mix lemon juice, olive oil, garlic, salt, and pepper.
- Add seafood, parsley, and red onion.
- Toss gently and refrigerate for 30 minutes before serving.

- Use fresh seafood for best flavor.
- Can be served chilled or at room temperature.
