Description

Delicate zucchini slices rolled with flavorful salmon for a light and elegant dish.


Ingredients

  • 2 medium zucchinis, thinly sliced lengthwise
  • 200g smoked salmon, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Brush zucchini slices with olive oil and lightly season with salt.
  3. Grill or pan-sear zucchini slices for 1-2 minutes per side until slightly tender.
  4. Lay out zucchini slices and place smoked salmon on top.
  5. Sprinkle with lemon zest, dill, and black pepper.
  6. Roll up each slice and secure with a toothpick.
  7. Bake for 5-7 minutes until heated through.
  8. Serve warm.

Notes

  • Use a mandoline for even zucchini slices.
  • Replace smoked salmon with fresh salmon if preferred.
  • Add cream cheese for a richer filling.
