Ingredients

- 2 medium zucchinis, thinly sliced lengthwise
- 200g smoked salmon, thinly sliced
- 1 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp fresh dill, chopped
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Preheat oven to 180°C (350°F).
- Brush zucchini slices with olive oil and lightly season with salt.
- Grill or pan-sear zucchini slices for 1-2 minutes per side until slightly tender.
- Lay out zucchini slices and place smoked salmon on top.
- Sprinkle with lemon zest, dill, and black pepper.
- Roll up each slice and secure with a toothpick.
- Bake for 5-7 minutes until heated through.
- Serve warm.
Notes
- Use a mandoline for even zucchini slices.
- Replace smoked salmon with fresh salmon if preferred.
- Add cream cheese for a richer filling.
