Description
Frittelle di Carnevale are traditional Italian Carnival fritters, light and fluffy, often filled with raisins or cream.
Ingredients
Scale
- 250g all-purpose flour
- 2 eggs
- 50g sugar
- 1 packet vanilla sugar
- 1 pinch salt
- 200ml milk
- 50g raisins (optional)
- 1 tbsp rum (optional)
- 1 lemon zest
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Soak raisins in rum for 30 minutes if using.
- Mix flour, sugar, vanilla sugar, salt, and lemon zest in a bowl.
- Beat eggs and milk together, then add to dry ingredients. Stir until smooth.
- Drain raisins and fold into the batter.
- Heat oil in a deep pan to 170°C (340°F).
- Drop spoonfuls of batter into the hot oil. Fry until golden, turning once.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
- For a lighter version, replace milk with sparkling water.
- Can be filled with pastry cream after frying.
- Best served warm.
