Description

Frittelle di Carnevale are traditional Italian carnival fritters, often sweet and fluffy, enjoyed during the festive season.


Ingredients

Scale
  • 250g all-purpose flour
  • 2 eggs
  • 200ml milk
  • 20g fresh yeast (or 7g dry yeast)
  • 50g sugar
  • 1 pinch of salt
  • Zest of 1 lemon
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Dissolve yeast in warm milk with a teaspoon of sugar. Let it sit for 10 minutes.
  2. In a bowl, mix flour, sugar, salt, and lemon zest.
  3. Add eggs and yeast mixture to the dry ingredients. Stir until smooth.
  4. Cover the dough and let it rise for 1-2 hours until doubled in size.
  5. Heat oil in a deep pan to 170°C (340°F).
  6. Drop spoonfuls of dough into the hot oil and fry until golden brown.
  7. Remove with a slotted spoon and drain on paper towels.
  8. Dust with powdered sugar before serving.

Notes

  • For extra flavor, add raisins soaked in rum.
  • Do not overcrowd the pan while frying.
  • Serve warm for the best taste.
