Description
Frittelle di Carnevale are traditional Italian carnival fritters, often sweet and fluffy, enjoyed during the festive season.
Ingredients
Scale
- 250g all-purpose flour
- 2 eggs
- 200ml milk
- 20g fresh yeast (or 7g dry yeast)
- 50g sugar
- 1 pinch of salt
- Zest of 1 lemon
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Dissolve yeast in warm milk with a teaspoon of sugar. Let it sit for 10 minutes.
- In a bowl, mix flour, sugar, salt, and lemon zest.
- Add eggs and yeast mixture to the dry ingredients. Stir until smooth.
- Cover the dough and let it rise for 1-2 hours until doubled in size.
- Heat oil in a deep pan to 170°C (340°F).
- Drop spoonfuls of dough into the hot oil and fry until golden brown.
- Remove with a slotted spoon and drain on paper towels.
- Dust with powdered sugar before serving.
Notes
- For extra flavor, add raisins soaked in rum.
- Do not overcrowd the pan while frying.
- Serve warm for the best taste.
