Description

Crema Catalana Bruciata is a traditional Spanish dessert similar to crème brûlée. It features a creamy custard base topped with a layer of caramelized sugar.


Ingredients

Scale
  • 500 ml whole milk
  • 4 egg yolks
  • 100 g granulated sugar
  • 20 g cornstarch
  • 1 lemon zest
  • 1 cinnamon stick
  • Extra sugar for caramelizing

Instructions

  1. Heat the milk with lemon zest and cinnamon stick in a saucepan. Do not boil.
  2. In a bowl, whisk egg yolks with sugar until pale.
  3. Add cornstarch to the egg mixture and mix well.
  4. Slowly pour the warm milk into the egg mixture, stirring constantly.
  5. Return the mixture to the saucepan and cook on low heat until thickened.
  6. Pour the custard into ramekins and let it cool. Refrigerate for at least 2 hours.
  7. Sprinkle sugar on top and caramelize with a kitchen torch or under the broiler.
  8. Serve immediately.
