Description

Ingredients

  • 500g cotechino sausage
  • 300g lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 liter water or broth

Instructions

  1. Rinse the lentils and soak them for 30 minutes.
  2. In a pot, heat olive oil and sauté onion, garlic, carrot, and celery.
  3. Add lentils, bay leaf, and water or broth. Simmer for 20 minutes.
  4. Meanwhile, boil the cotechino sausage in water for 30 minutes.
  5. Slice the cotechino and add it to the lentils. Cook together for 10 minutes.
  6. Season with salt and pepper. Serve hot.
