A simple and delicious chicken carciofi recipe that combines tender chicken with artichokes for a flavorful meal.

- 4 boneless, skinless chicken breasts
- 1 can (14 oz) artichoke hearts, drained and quartered
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with salt, pepper, and oregano.
- Add chicken to the skillet and cook for 5-6 minutes per side until golden brown.
- Remove chicken from the skillet and set aside.
- In the same skillet, add garlic and sauté for 30 seconds.
- Pour in chicken broth and white wine, scraping up any browned bits.
- Add artichoke hearts and simmer for 2-3 minutes.
- Return chicken to the skillet, spooning sauce over it.
- Sprinkle with Parmesan cheese and cook for another 2 minutes.
- Garnish with fresh parsley before serving.
Notes
- Substitute white wine with extra chicken broth if preferred.
- For extra flavor, add a squeeze of lemon juice before serving.
- Serve with pasta or crusty bread.
