Description
Chiacchiere veloci are traditional Italian fried pastries, often made during Carnival. They are light, crispy, and dusted with powdered sugar.
Ingredients

- 250g all-purpose flour
- 50g sugar
- 2 eggs
- 30g butter, melted
- 1 tsp vanilla extract
- 1 tbsp white wine or grappa (optional)
- 1 pinch of salt
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- Mix flour, sugar, and salt in a bowl.
- Add eggs, melted butter, vanilla, and wine. Knead into a smooth dough.
- Roll the dough thinly and cut into rectangles or ribbons.
- Fry in hot oil until golden and crisp.
- Drain on paper towels and dust with powdered sugar.
Notes
- Use a pasta machine for even thickness.
- Don’t overcrowd the frying pan.
