- 200g digestive biscuits
- 100g melted butter
- 500g cream cheese
- 100g powdered sugar
- 200ml heavy cream
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions
- Crush the biscuits into fine crumbs.
- Mix the crumbs with melted butter and press into a springform pan.
- Beat the cream cheese until smooth.
- Add powdered sugar, vanilla, and lemon juice, mixing well.
- Whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the cream cheese mixture.
- Pour the mixture over the biscuit base and smooth the top.
- Refrigerate for at least 4 hours before serving.

- Use full-fat cream cheese for best texture.
- Chill the mixing bowl before whipping cream.
