Description

Carciofi sott’olio are marinated artichokes preserved in oil, a traditional Italian appetizer or side dish.


Ingredients

  • 10 fresh artichokes
  • 1 lemon
  • 500 ml white wine vinegar
  • 500 ml water
  • 2 tbsp salt
  • 500 ml extra virgin olive oil
  • 2 cloves garlic, sliced
  • 1 tsp black peppercorns
  • 2 bay leaves

Instructions

  1. Clean the artichokes by removing tough outer leaves and trimming the stems.
  2. Cut each artichoke into quarters and remove the choke.
  3. Squeeze lemon juice over the artichokes to prevent browning.
  4. Boil vinegar, water, and salt in a pot.
  5. Add artichokes and cook for 5 minutes.
  6. Drain and let them cool.
  7. Layer artichokes in sterilized jars with garlic, peppercorns, and bay leaves.
  8. Cover completely with olive oil.
  9. Seal jars and store in a cool, dark place for at least 2 weeks before eating.

  • Ensure jars are sterilized to prevent spoilage.
