- 4 fresh artichokes
- 2 cloves garlic, minced
- 3 tbsp olive oil
- 1/2 cup white wine
- 1/2 cup vegetable broth
- 1 lemon, juiced
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Clean the artichokes by removing tough outer leaves and cutting off the top third.
- Rub the cut parts with lemon juice to prevent browning.
- Heat olive oil in a large pan over medium heat.
- Add garlic and sauté until fragrant.
- Place artichokes in the pan and cook for 2-3 minutes.
- Pour in white wine and let it reduce slightly.
- Add vegetable broth, salt, and pepper.
- Cover and simmer for 20-25 minutes until artichokes are tender.
- Sprinkle with fresh parsley before serving.
Notes
- Use fresh artichokes for the best flavor.
- Discard the fuzzy choke inside the artichoke before cooking.
