Ingredients

- 4 large artichokes
- 1 lemon
- 2 cloves garlic
- 1/4 cup fresh parsley
- 1/4 cup fresh mint
- 1/2 cup olive oil
- Salt to taste
- Pepper to taste
Instructions
- Trim the artichokes by removing tough outer leaves and cutting the tops.
- Squeeze lemon juice over them to prevent browning.
- Chop garlic, parsley, and mint together.
- Stuff the herb mixture between the artichoke leaves.
- Heat olive oil in a pan and place artichokes upside down.
- Add water halfway up the artichokes and season with salt and pepper.
- Cover and simmer for 30-40 minutes until tender.
