Description
Cantucci Toscani are traditional Italian almond biscuits from Tuscany. They are crunchy, twice-baked, and perfect for dipping in coffee or dessert wine.
Ingredients
Scale
- 300g all-purpose flour
- 200g sugar
- 150g whole almonds, lightly toasted
- 2 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
- Mix flour, sugar, baking powder, and salt in a bowl.
- Add eggs and vanilla extract. Knead into a firm dough.
- Fold in almonds evenly.
- Shape dough into two logs, about 3cm wide. Place on baking sheet.
- Bake for 25 minutes until lightly golden. Remove and cool for 10 minutes.
- Slice logs diagonally into 1cm thick pieces. Place slices back on baking sheet.
- Bake for another 10 minutes until crisp and golden. Cool completely before serving.
Notes
- Store in an airtight container for up to 2 weeks.
- For extra flavor, add orange zest or a splash of almond liqueur.
