Ingredients

  • 1 cup sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup almonds, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate, melted
  • 1/4 cup festive sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix flour, sugar, baking powder, and salt in a bowl.
  3. Whisk eggs and vanilla in another bowl. Add to dry ingredients and mix until combined.
  4. Fold in almonds and cranberries. The dough will be sticky.
  5. Shape dough into two logs on the baking sheet. Bake for 25 minutes.
  6. Remove logs from oven and let cool for 10 minutes. Slice diagonally into 1-inch pieces.
  7. Return slices to the baking sheet, cut side down. Bake for 10 more minutes until crisp.
  8. Cool completely. Drizzle with melted white chocolate and decorate with sprinkles.
