Description
Authentic zeppole are Italian fried dough pastries, often enjoyed during festivals. They are light, fluffy, and dusted with powdered sugar.
Ingredients

- 1 cup water
- 2 tbsp sugar
- 1/2 tsp salt
- 2 tbsp unsalted butter
- 1 cup all-purpose flour
- 3 large eggs
- 1/2 tsp vanilla extract
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a saucepan, combine water, sugar, salt, and butter. Bring to a boil.
- Remove from heat and add flour all at once. Stir vigorously until dough forms.
- Return to low heat and cook for 2 minutes, stirring constantly.
- Transfer dough to a bowl and let cool slightly.
- Beat in eggs one at a time, mixing well after each addition. Stir in vanilla.
- Heat oil in a deep pan to 375°F (190°C).
- Drop spoonfuls of dough into hot oil and fry until golden brown, about 3-4 minutes.
- Drain on paper towels and dust with powdered sugar before serving.
Notes
- Use a piping bag for more uniform shapes.
- Serve warm for the best texture.
- Store leftovers in an airtight container for up to 2 days.
